Orlando is the last cheftestant to present his creation, a chocolate apple entremet that consists of a complex layering of chocolate biscuit soaked in apple martini mix, chocolate mousse, apple spiced gelee, vanilla crème brûlée custard and chocolate mousse with chocolate crunchies. Orlando's Chocolate Treasures indeed! All this is accompanied by apple sorbet. Dana questions the "candy apple" designation. Orlando explains that he didn't want to stick too close to true candy apples because they can be cloying. Instead, he wanted to play on the flavors and textures of a candy apple. Au contraire, Hubert doesn't think there's enough texture. The diners agree with his assessment, and Orlando steels himself to defend himself at panel.
At the end of the night, Matthew barks that he's ready to announce who won his raffle. Chris makes a big joke of prancing up to claim a pig that he didn't won, and Sally snarks that Matthew is an overachiever. But Matthews has sound logic that you can't argue with: "Who doesn't love a pig?"
As the guests leave, none of the cheftestants is confident. Matthew especially doesn't want to go home for biffing two pies in a row. With that, judgment is afoot. Sally and Matthew are first to learn their fate. They prepared the judges' favorite desserts. Matthew scored for his balance, simplicity and delicious ice cream. Sally succeeded by showing the many dimensions of corn and her flavor contrast of sweet caramel corn and salty peanuts. So who takes the proverbial cake this week? Matthew! I'm kind of surprised, actually. For a challenge that was all about refined elegance, he won for doing it McDonald's style. Then again, everyone loves a pig.
The rest of the cheftestants march to their fate as the B3. Orlando's so-called candy apple had barely any apple in it, save a paltry gelee and a bit of sorbet on the side. "For me," says Gail, "it was a chocolate dessert." I think you mean a Chocolate Treasure, Gail. Johnny questions Orlando's rationale, and O-Town's all, "Well frankly, my dear, I like chocolate." Francois thinks a different chocolate could have enhanced the chocolate better. Moving on, the judges don't even need to tell Carlos went wrong. It was the damn macaroons. And the stand-in angel food cake had a simultaneously sticky and squishy texture that didn't work. What's more, the churros were soggy and cold. Of the three cheftestants, Chris is least certain why he's in the bottom. Johnny zeroes in on one thing: Chris's strawberry gelee. Because it was made of agar (Japanese red bean jelly), the texture threw a lot of people off. Hubert chips in that Chris's overly complex preparation took away from some of the refinement.
